1 kg pork belly, cut into chunks
½ cup soy sauce
⅓ cup vinegar
1 cup water
1 onion, sliced
6 cloves garlic, crushed
2 bay leaves
1 tsp whole black peppercorns
1 tbsp brown sugar (optional)
Salt to taste
1 tbsp cooking oil
Marinate the pork in soy sauce, garlic, and peppercorns for at least 30 minutes.
In a pot, heat oil and sauté the onions until soft.
Add the marinated pork (reserve the marinade) and lightly brown the meat.
Pour in the reserved marinade, add vinegar and bay leaves, then let it boil without stirring for 5 minutes.
Stir, then simmer on low heat for 40–50 minutes or until the pork is tender.
Taste and adjust the flavor — add salt or sugar depending on your preference.
Serve hot with rice. Enjoy!
